Taurus Moon Spirits
Why a bourbon project? Our line of spirits is a collaboration with distillers, artisans, wine-makers and other local farmers who share our values of sustainability. And there is a twist (in that Manhattan).
Our cows eat grass, but sometimes get a snack. Before we get to the nitty, a quick background: Large distillery Stillage (the spent grain after distillation) is a serious environmental pollutant. It often ends up in a landfill, mixed with non-degradable trash with disastrous impact on its surroundings.
The stillage from our whiskey is brought back to the farm, naturally dried, tested, offered to our cattle and devoured (in moderation), creating yet another regenerative, closed loop. This is an exciting process in its early stages of logistical research and implementation by responsible producers elsewhere, with tremendous possibility of reducing the footprint the distillery business. The safety and nutritional advantages have been researched and confirmed, it is the cost that stops the bigger guys from connecting with the agricultural industry on a larger scale. We strive to be a small but relevant model for the better future of distilling… And yes, the cows love it and no, we knew you’d ask, they do not get tipsy, as there are no significant remnants of alcohol in the delicious mess…
The Rickhouse
And the Whiskey itself is fabulous. Because of our relationships, we get to be closely involved in the process of aging, blending, bottling and sometimes infusing. We use barrels of local winemakers, bring in ingredients from our farm.. there is too much to list and taste. Visit our Tavern and have a splendid, neat pour, or a cocktail prepared by one of our award-winning mixologists.
